Baja Fish TacoThe search for the best original baja fish taco continues. For those who don't know what an original Baja fish taco is a white fish is deep fried, not grilled, served in a corn tortilla, hopefully one that is handmade, with shredded cabbage-not lettuce and a thin sour crem or crema based sauce and pico de gallo and lime. Stay tuned for other candidates. This taco from the Taco Stand in Encinitas with other locations in LaJolla and downtown San Diego featured a fresh handmade corn tortilla, a lightly battered mild fish fillet, shredded cabbage, diced tomatoes and a mild crema based salsa.
