The first 99 Cents Only store opened in Los Angeles on lucky Friday the 13th in Los Angeles. To Celebrate the grand opening of the first store they sold televisions to the first 9 customers for only 99 cents. More than 300 people showed up to stand in line before the store opened. This was way before it was hip to stand in line overnight to get the new iPhone. The huge lines caught the attention of more than 10 TV news stations that covered the store's grand opening. Now there are more than 350 stores in four states. Every new store grand opening still opens with 9 televisions sold to the first nine customers for 99 cents.

Maddie's Vegan Black Bean Chili
Ingredients:
2 cans black beans 1 can refried black beans 1 serrano chile 1 can chipotle tomatoes 1/8 cup olive oil (just about any oil will do) 2 carrots, cut into coins 1 small onion or 4 shallots (diced) 1/2 cup frozen corn 4-6 cloves garlic (minced) Sour cream parsley or cilantro for garnish Heat up the oil in a large saucepan or small stockpot, when the oil shimmers add the onions and/or shallots and garlic. Cook the onions until translucent, add the carrots and cook until carrots are warmed through. Add the Serrano Chile, note keep the Serrano Chile whole if you'd like to take it out later. If you don't have a Serrano Chili, you may substitute a Jalepeno or Habenero. |
You can also dice the chili with or without the seeds, the seeds carry a lot of the heat so if you want it less spicy leave out the seeds and ribs. Add the 2 cans of black beans with their liquid, Stir in the refried black beans, can of tomatoes and the corn. If the chili is too thick for your liking, add some water. Cook over low heat and simmer for 30 minutes. Garnish with sour cream and parsley an cilantro.

Clam Chowder
Ingredients:
1-Medium yellow onion or ½ large yellow onion diced ½ Red Bell Pepper diced ½ Green Bell Pepper diced 3 Ribs of celery diced 2 Cups Half & Half 4-5 Medium Potatoes, peeled and diced 1 Cup Frozen Corn or Canned corn 2 Cans Dices Clams with Juice 1 Can Smoked Clams 2 Cups Broth-Can use seafood, vegetable, or chicken 1 bottle of clam juice 3-4 Strips of bacon or pancetta Roughly diced (Optional) |
You can make a delicious clam chowder with most of the ingredients found at the 99 Cent Only Store. The only other item that you will need to purchase elsewhere is clam juice. This chowder is rich but not overly thick and it has lots of fresh vegetables in it. We thicken it not with flour or roux but with potatoes. We use our immersion blender to blend the potatoes to thicken the chowder just enough.

If you choose to use bacon or pancetta add it to your stock pot and cook it over medium low heat to render the fat. If you don't use bacon you can use butter or olive oil. Once the bacon is browned remove it and save for garnish. Add the onion, 2 ribs of celery and season them with salt and pepper, then sauté until the onion is transparent. Add half of the potatoes and stir, be careful not to let the onions and potatoes brown.
In another pot add the rest of the potatoes to the broth and clam juice and bring to a boil. Cook the potatoes until soft but still not completely cooked, then add the red pepper, green pepper, the rest of the celery and corn cook for just a couple of minutes until the peppers are warmed through. Add the 2 cans of clams with their juice to the small pot with the potatoes and vegetables and add the smoked clams without the oil stir them in then turn off the heat and let it stand.. To the large stock pot add the half and half and lower the heat to low and cook until the potatoes are tender. Turn off the heat on the large stock pot and use your immersion blender to blend the soup using the potatoes to thicken the soup, you don't have to blend until completely smooth. Add the contents of the other pot to the large pot and stir to mix then heat up the chowder over low heat until it comes to a boil then you can turn off the chowder and it's ready to enjoy! Garnish with the bacon and serve with crusty bread and oyster crackers
